
Spiced Caroot & Lentil Soup
Spiced Carrot & Lentil Soup is a hearty, flavorful dish made with carrots, protein-rich red lentils, and warm spices like cumin, coriander, and other spices. This comforting soup is often blended for a smooth texture and finished with a squeeze of lemon or a swirl of yogurt for brightness. It’s a nourishing, easy-to-make meal perfect for chilly days or a healthy lunch option.

- 1 Pressure Cooker
Ingredients
- 2 tsp Cumin seeds
- Pinch dried chili flakes
- 2 tbsp Olive oil
- 600 Gm Carrots washed and coarsely grated (no need to peel)
- 140 gm Red split lentils
- 700 ml pint hot vegetable stock
- 125 ml milk
- Plain yogurt and warmed naan breads to serve
Instructions
- Heat the slow cooker if necessary. Put half the cumin seeds, half the chili flakes, the oil, carrots, lentils, and stock in the pot. Cover and cook on High for 3 hours until the lentils are tender.
- Dry-fry the remaining cumin seeds and chili flakes until fragrant.
- When the lentils are done, stir in the milk and whizz the soup with a stick blender or in a food processor until smooth (or leave it chunky, if you prefer). Add a splash of water if the soup is a bit thick for you. Season to taste and finish with a dollop of yogurt and a sprinkle of the toasted spices. Serve with warmed naan bread.
